Banana porridge pancakes

Serves: Makes enough pancakes for 4

Here’s my banana porridge pancakes. I shared this recipe way back when Louis was only a baby 🥹 but here it is again - unchanged, but now well worn in with love. 
Fluffy, comforting, and the perfect blend of two of our favourite breakfasts.

Ingredients

1 cup of traditional oats (not quick, ever)
1 cup of milk (whatever you like, I like oat)
2 eggs, whisked
30g butter, melted, plus extra for cooking
1/2 cup of plain or wholemeal flour
1 teaspoon baking powder
pinch of salt (optional)
1 ripe banana, mashed
Collagen or protein powder (optional)

Banana, maple syrup, blueberries to serve

Method

Add oats and milk to a large bowl. Leave to soak for 20 minutes or so to soften.
Add eggs and melted butter, stir to combine. Follow with flour, baking powder and salt, if using. Add collagen or protein powder here. Mix well. Finally, stir through the mashed banana. Like all good pancake recipes, leave batter to stand for 10 minutes.

Heat a large pan over medium heat. Melt butter and blob in pancake mix to desired size. Remembering the first pancake is never the best (but still delicious). Don't overcrowd the pan as it makes it hard to flip. Cook for roughly 3 minutes or until golden and bubbles start to appear. Flip over and cook for another 2 minutes or until puffed and golden.

Serve warm with your favourite pancake toppings.
