Grilled scallops with pancetta and garlic butter

Grilled in their shells with garlic butter, they’re showy yet effortless, and irresistibly delicious. Here, I’ve draped a whisper-thin slice of pancetta over the top for a salty, smoky crunch; but other times I scatter breadcrumbs and let them soak up the butter as they grill.
