One tray sausage, potato, tomato and caramelised onion bake

This might just be my all-time favourite one-tray sausage bake—and that’s saying something because I make a lot of them. It’s sticky, sweet, jammy, and everything cooks down together in one tray. The secret? Store-bought caramelised onions, straight from a jar. Potatoes, cherry tomatoes, and onions go into the tray with garlic, oregano, olive oil, salt, a splash of vinegar to balance the sweetness, and a little water to get things going. On top, I lay some chubby little pork chipolatas, but big sausages work just as well. Roast for about an hour, turning halfway, until everything is golden and you’re left with a syrupy sauce.

I love it with a peppery leaf like watercress, but rocket or radicchio works too.

Serves 4

  • Ingredients

    500g baby potatoes (I like Kipflers!), halved
    600g cherry tomatoes, kept whole
    3 big tablespoons or say ½ cup of caramelised onion relish
    6 garlic cloves, left in skins
    Handful of fresh oregano
    2 tablespoon olive oil
    Salt flakes
    Splash of red wine vinegar
    2 tablespoon water
    500g pork chipolatas

    Watercress, rocket or radicchio to serve

  • Method

    Preheat oven to 180FF. Throw your baby potatoes, cherry tomatoes, onion relish, garlic cloves, oregano, olive oil, salt, red wine vinegar. Toss everything together then settle in the tray. Pour in water then lay sausages over the top. Give the sausage a little drizzle of olive oil.

    Pop in the oven and roast for 1 hour, taking the tray out to give everything a toss, and turn the sausages over half way through.

    Leave to sit for 5 minutes before serving with your peppery greens.
